Hawaiian Turkey Burgers

Today I want to share one of my older son's favorite dinners.  He asks me to make these Hawaiian turkey burgers often.  They are super moist and have great flavor.  I prefer to eat mine over spinach but my boys like theirs on a bun.

 
Hawaiian Turkey Burgers
(recipe adapted from six sisters' stuff)
 

1 pound lean ground turkey
1/2 cup dry bread crumbs
1/4 cup red pepper chopped
1/2 teaspoon ground ginger
1 small can pineapple slices, reserve juice
4 slices co-jack cheese
Hamburger buns or spinach
Tomato
Avocado
Directions:
In a mixing bowl, combine turkey, bread crumbs, pepper, ginger, 1/4 cup reserved juice from pineapple.  Divide turkey mixture into 4 equal parts and form into patties.  Grill over medium until cooked through.  The last few minutes of cooking, place pineapple over heat to grill.  Place a slice of Co-jack cheese on top of each patty when warm.  Top with burgers and pineapple, tomato and avocado and serve on a bun or bed of spinach.

    1 Tbsp peanut butter
    1 cup almond milk
    Ice

    Quinoa Stuffed Peppers

    After going to farmer's market I needed to make a healthy recipe that I could use my fresh veggies in.  This turned out so good!  I thought I would share this delicious, healthy recipe with you.  Even my son thought they were good.
    Sorry the picture does not do justice. Here is the recipe:

    
    Quinoa Stuffed Peppers
    (recipe adapted from: damndelicious.net)
    2 cups cooked quinoa
    1 (4-ounce) can green chiles
    1 can corn
    1 can black beans, rinsed and drained
    1/2 cup petite diced tomatoes
    1/2 shredded pepper jack cheese
    1/4 cup crumbled feta cheese
    3 Tbsp chopped fresh cilantro
    1 tsp cumin
    1/2 tsp onion powder
    1/2 tsp chili powder
    salt and pepper to taste
    6 bell peppers, tops cut and stemmed and seeded
     
    Preheat oven to 350 degrees.
     
    In a large bowl combine quinoa,green chiles, corn, black bean, tomatoes, cheeses,
    cilantro, cumin, garlic, onion and chili powde, salt and pepper to taste.
     
    Spoon the filling into each pepper.  Place in a 9x13 baking dish with about an inch of water in the bottom, cavity side up, and bake until the peppers are tenders and the filling is heated through, about 25-30 minutes.
     
    Serve immediately.

    Blueberry Coconut Oatmeal

    This morning I ran 4 miles to our local farmer's market.  I met my mom there so I was able to get all of my fresh goods home.  I picked up heirloom tomatoes, green beans, spaghetti squash, carrots, kale, green peppers, pears, and plums.  I love this time of year!
     
    I came home and made one of my favorite breakfasts.  I thought I would share it with you, it is so good.  It's like having dessert for breakfast that is healthy.  Win, win right?  It is Blueberry Coconut Oatmeal.
    Here is the recipe:
    Blueberry Coconut Oatmeal
    1 cup rolled oats
    1 cup unsweetened almond milk
    1 cup water
    1 Tbsp chia seeds
    1/2 tsp cinnamon
    blueberries
    coconut
    walnuts
    Cook the almond milk, water, rolled oats, cinnamon and chia seeds over medium heat for about 10-15 mins or until the oats are done.  Top with blueberries, coconut and walnuts.  Enjoy!
